MA! Officina Gastronomica is our gourmet lab where we produce the traditional bresaola, or, as we call it here in Valchiavenna, brisaola. Then we got a real taste for it, and along came cured meats made of goat, venison and black Alpine pig, delicatessen products and jams. MA! is a thinking laboratory in which we combine age old methods with the latest research and the promotion of products, especially local ones: our work is constantly evolving, respecting the times and rhythms of nature.
